Mini Bundt Pan Pumpkin Bread

Now that its Fall and very close to Thanksgiving I am very much inspired by this time of year .My imagination always go through the roof.So in this post it may not be so creative but it shows I love pumpkin .I always love to bake I am very passionate about it.

I have been waiting forever to use my mini bundt pan.I finally came around  to it and I made this lovely and great tasting pumpkin bread in mini bundt pans .They are moist and a bit sticky so I hope they’ll stick to your ribs.I made these  with my homemade pureed pumpkin and I also  used my homemade pumpkin pie spice .What a difference homemade makes its so much better.It didn’t use any butter I used oil instead to make them moist. They are great for breakfast along side some coffee or tea .So I hope you enjoy!!!

Ingredients:

2 cups flour

1 cup light brown sugar

1 tsp salt

1 tsp baking soda

1/2 tsp baking powder

1 tsp vanilla

1 cup pumpkin puree

2 eggs at room temp.

1/2 cup milk

1/4 cup oil

 

Directions:

1. Preheat oven to 350 degrees

2.Grease and flour the mini bundt pans.

3.In medium or large bowl,add dry ingredients and whisk together ,set aside.

4.In another medium or large bowl ,put the wet ingredients together and mix with a whisk or hand mixer .Make sure not to over mix.

5.Add the dry ingredients to pumpkin mixture and mix with a spatula or whisk until thoroughly mixed.Make sure not to over mix.

6.Fill the mini bundt pans with the batter (only 1/3 full).

7.Place pan into oven and bake for 25-30 minutes or until a toothpick comes out clean.

8.Take mini breads out of the oven and let it cook for 10 minutes in pan.

9.Now invert them onto a baking rack and let cool for another 25-30 minutes.

10.While they are cooling you can make the glaze.

Pumpkin Spice Glaze Ingredients and Directions:

1/2 cup powdered sugar

1-1/2 tbsps milk

1/4 tsp pumpkin spice

Directions:

11.In a small bowl mix all of the ingredients thoroughly and set aside.

When mini bread is cool use a butter knife or a spatula  to spread the glaze on top and let drip  dry. Decorate them with any sprinkles and jimmies you may have.

12.Transfer to serving dish and enjoy!!

Easy Rustic Sweet Bean Pie

The History and my experience with bean pie

This dessert is known to be apart of the African American and Muslim culture in my research its also found in the southern states.It’s an dessert with a deep culture .This is all I know about this type of pie.This history is not huge over the internet but I know different cultures have own bean desserts.

Bean pie, Bean Pie Oh what a memory .I remember as a kid eating bean pie to be truthful wasn’t my favorite but I loved sweet  baked  goodies like cakes,cookies, pies and etc.Now that I am older I have teetered tottered with the idea for a while so now I finally made it happen.This my first homemade bean pie and I tell you it is really good .It really doesn’t taste like it has beans in it and its has a nice sweetness with spices that comes through beautifully.I like it I hope you’d like it.

 

Mis En Place:

 

1 15oz can of Navy beans-Drained and Rinsed

3/4 cup light brown sugar

2 eggs – room temp

1 tsp vanilla extract

1/2 cup of milk, half/half or evaporated milk

1/2 tsp cinnamon

1/2 tsp ground ginger

1/4 tsp allspice

1/8 tsp nutmeg

1 unbaked pie shell

 

 

Directions:

1.Set the oven to 350 degrees

2.Puree the beans  in a blender,food processor or with an immersion blender.Now add in the sugar,eggs ,vanilla ,spices milk and with a hand mixer on low speed mix together until fully incorporated.

3.Now pour mixture into pie shell.

4.Place into the oven for 45 mins or until a tooth pick comes clean.

5.When done put pie onto a wire rack to cool for about 30 mins-1 hr.

6 Now you can plate and serve with some whipped cream.

 

Maple Spiced Pecan Pie Bites

I am excited to share some of my dishes and desserts.I am starting with these pecan bites that I had made once before for one my Christmas parties they were a hit.They are easy to make and made with maple syrup instead of corn syrup I am not a fan .I added a cinnamon and ground ginger to add a little extra flavor.I made them with a store bought crust to make things easier if you prefer to make your own  crust that is fine too.

Ingredients:

2 eggs at room temp

1/2 cup maple syrup

1/4 light brown sugar

2 tsps vanilla paste or vanilla extra

2 tbsps melted  unsalted butter

Pinch of salt

1/2 tsp cinnamon

1/2 ground ginger

1 store bought or homemade pie crust

 

Directions:

1.Preheat oven to 350 degrees.

2.In a medium or large  mixing bowl place all of  the ingredients. Mix with a whisk or spatula until thoroughly combined.Place aside.

3.Roll out the dough on a lightly floured surface. Take a 3 inch round cookie cutter and cut out as many circles as you can.

4.Place the cut out dough into a mini muffin pan and gently press into pan.

5.Spoon 2 tsps of the pecan filling in each pie shell.(try not to over fill)

6.Place into oven and bake  for 15- 25 mins or until filling is set and  crust is golden brown.

7.Let cool pecan bites cool on a bakers rack and let cool for 5 minutes in the pan.Now remove from pan with a butter knife carefully .Cool completely .

Now transfer the pecan bites to a  serving dish and Enjoy!!!
