Fresh Autumn Pumpkin Puree’

Hey old man autumn  is back upon us again and now we can start cooking for the holidays .To start it off is our love for everything pumpkin from purees to bread.I just love autumn it is my favorite season because I love pumpkins the look,smell and taste.That’s why a few years I started making my own pumpkin puree because I was up for  the challenge to doing so.It was so easy to make  and it tasted better than the canned puree.I was so please by it I continued the tradition.Homemade pumpkin puree freezes well up to 1 yr. Have fun making the puree and Happy Fall!!!

What you’ll need:

2 Sugar Pumpkins ( I had small ones about 1.5 lbs each)

Sharp Knife

Food Processor or Immersion Blender

Medium Bowls

Spoon for scooping out pulp and seeds

Deep casserole pan or Sheet pan

Aluminum Foil or Parchment Paper

Let’s prep the pumpkin for roasting :0)

1. Wash and Dry pumpkins.

2.Break or cut stem off of pumpkins.

3.Cut pumpkin from top to bottom.

4.Take a spoon or scoop and scrape out the pulp and seeds.Put seeds and pulp in a bowl.

Pumpkins ready for roasting ,scooping and pureeing :0)

1. Lay the pumpkins face down on a foiled or parchment lined pan.Place pumpkins in a  350 degree oven and roast them for 60-90 minutes( Pending on the size of your pumpkins.)

2.Once the pumpkins are done roasting take them out and let them cool for a bit about 10- 15 minutes.

3.Now scrape out the pumpkin flesh and put it into a medium bowl  or food processor .( I used an immersion blender).

4.With your food processor or immersion blender puree the pumpkin until its smooth in texture.

For future seasonal use:

 

1. Scoop pumpkin puree into freezer bags. The puree will freeze well for up to 1yr.

Mini Bundt Pan Pumpkin Bread

Now that its Fall and very close to Thanksgiving I am very much inspired by this time of year .My imagination always go through the roof.So in this post it may not be so creative but it shows I love pumpkin .I always love to bake I am very passionate about it.

I have been waiting forever to use my mini bundt pan.I finally came around  to it and I made this lovely and great tasting pumpkin bread in mini bundt pans .They are moist and a bit sticky so I hope they’ll stick to your ribs.I made these  with my homemade pureed pumpkin and I also  used my homemade pumpkin pie spice .What a difference homemade makes its so much better.It didn’t use any butter I used oil instead to make them moist. They are great for breakfast along side some coffee or tea .So I hope you enjoy!!!

Ingredients:

2 cups flour

1 cup light brown sugar

1 tsp salt

1 tsp baking soda

1/2 tsp baking powder

1 tsp vanilla

1 cup pumpkin puree

2 eggs at room temp.

1/2 cup milk

1/4 cup oil

 

Directions:

1. Preheat oven to 350 degrees

2.Grease and flour the mini bundt pans.

3.In medium or large bowl,add dry ingredients and whisk together ,set aside.

4.In another medium or large bowl ,put the wet ingredients together and mix with a whisk or hand mixer .Make sure not to over mix.

5.Add the dry ingredients to pumpkin mixture and mix with a spatula or whisk until thoroughly mixed.Make sure not to over mix.

6.Fill the mini bundt pans with the batter (only 1/3 full).

7.Place pan into oven and bake for 25-30 minutes or until a toothpick comes out clean.

8.Take mini breads out of the oven and let it cook for 10 minutes in pan.

9.Now invert them onto a baking rack and let cool for another 25-30 minutes.

10.While they are cooling you can make the glaze.

Pumpkin Spice Glaze Ingredients and Directions:

1/2 cup powdered sugar

1-1/2 tbsps milk

1/4 tsp pumpkin spice

Directions:

11.In a small bowl mix all of the ingredients thoroughly and set aside.

When mini bread is cool use a butter knife or a spatula  to spread the glaze on top and let drip  dry. Decorate them with any sprinkles and jimmies you may have.

12.Transfer to serving dish and enjoy!!

Chocolate Chip Peppermint Cookies

As we’re getting close to Christmas I have some recipes I want to share and I want to  start with some cookies they are delicious.They are not too sweet and they are chewy with a bit of  crisp.To compliment the season I added some peppermint that I broke into pieces and some white chocolate chips .

Ingredients:

1/2 cup unsalted butter (1 stick of butter

1/2 cup light brown sugar

1/2 cup light brown sugar

2 cups flour

1 tsp baking soda

1 tsp vanilla extract

1/2 tsp salt

2 eggs

1 cup white chocolate chips

1 chopped or broken candy candy

 

Directions:

Preheat oven to 350 degrees  and line a sheet pan with parchment paper.

1. In a medium bowl place the butter and sugars.

2. With a hand mixer mix on medium speed until light and creamy.

3.Now add the vanilla extract and mix.

4.Add the eggs one at a time.

5.Add in the flour and mix a little at a time until fully incorporated .Make sure not to over mix.

6.Stir chocolate chips,crushed canes and mix.

7.Take some plastic wrap and cover the bowl.

8.Place bowl into refridgerator and chill for 1 hr.

9.With a spoon or small ice cream scoop drop dough an 1 inch apart.

10. Place cookies into the oven and bake for 10-12 minutes. I baked these for 10 minutes.

11.Tranfer them to a cooling rack and let them cool for 10-20 minutes.

12. Enjoy them with some eggnog or milk .

Chipotle Orange Glazed Chicken Wings

I love chicken,I love oranges so what I did I combined the two and I made an orange glaze with a bit of other goodies such as chipotle powder for that extra zip of heat and brown sugar for sweetness ,orange marmalade for that hint of orange.This chicken dish reminded me of chicken a l’Orange I haven’t had that since I was a kid that was many moons ago.I wanted to make this because I saw one of my friends make some chicken with orange juice that’s how I became inspired .I have sort of twisted it to be more of my taste and I am ready to share this lovely chicken inspiration here I go.This chicken makes a good main dish or as a appetizer at a holiday party they are cute ,little and finger friendly easy to hold.Believe me they are good. They will keep you wanting more.

Ingredients:

1 pack of chicken drummies or breast,thighs,wings

1/2 cup of orange juice

2 tbsps orange marmalade

2 tbsps brown sugar

1 cup  of ketchup

2 tbsp lemon juice

3 tbsps olive oil

1/2 tsp garlic powder

1/2 tsp chipotle  powder

2 tsps cornstarch

1/3 cup water

1/8 tsp salt

1/8 tsp pepper

Directions:For The Chicken

Preheat the oven to 400 degrees.

1. Put chicken on a foiled lined sheet pan.

2. Season the chicken with  salt and pepper on both sides

3. Now place the chicken in the oven and bake for 50 minutes .

Directions The Glaze:

1.In a small to med sauce pan add the orange juice,lemon juice,orange marmalade,ketchup,olive oil,brown sugar,garlic powder,ground chipotle powder, cornstarch, water ,salt and pepper

2. Now stir the mixture over medium heat bring to a boil  for about 5 minutes or until mixture starts to thicken.Now reduce heat and stir occasionally for 5-10 minutes. when glaze has thickened turn off heat and set aside.

3.When chicken is done baking, spoon the glaze onto the chicken and put it  back in the oven for 5 minutes .Repeat this 2 more times until the chicken start to char a little at the bottom .

4. Now you can plate the chicken and serve .Let me tell you this chicken is awesomely delicious and  I hope you enjoy making this chicken as much as I did.

Caramel Apple Cookie Pops

Apples,Apples and More Apples can never get enough of apples.This fall I am really inspired and I will be trying new recipes like in the picture above .Those are my Caramel Apple Cookie Pops wow these are different in my eyes . I wanted to do caramel apples with real apples I just wasn’t into it so I went another way I am glad I did.These were easy and fun to make you and your kids.They would love  this because its kid friendly with parent supervision for the caramel .This is my homage to Halloween day . The best part is decorating the cookies with the caramel and putting candies,coconut or anything you want on them. These taste really delicious and not that sweet .You won’t be able to leave them alone after having one.So you if you have an apple imagination you can make just about anything apple.This beats bobbing for apples and besides that this is more fun.

Ingredients:

1 stick of butter

1/2 cup light brown sugar

1/4 cane or white sugar

1/2 tsp vanilla

1 egg

1/2 tsp red gel paste food coloring

1-3/4 cup flour

1/8 tsp salt

1/2 tsp apple pie spice

1/4 tsp baking soda

1/2 cup caramel bits or 12 caramel squares

Wooden popsicle sticks

1 -2 tbsps of water

Optional Toppings:

Reese’s Pieces

Autumn color sprinkles

Coconut flakes

Chopped Pecans

1.Preheat oven at 350 degrees and line a sheet pan with parchment paper.

2.In a bowl cream butter ,sugars and apple pie spice until light and fluffy.Add Vanilla and mix.

3.Now add  the egg and mix.Add the flour,baking soda ,salt ,food coloring and beat thoroughly until the dough is red.

4.Put the dough on a board or the counter and place the dough between 2 sheets of wax paper.Roll out dough to a 1/4 to 1/2 inch thickeness.

5. With apple shaped cookie cutter press it into dough and place it onto the sheet pan .

6.Place the popsicle sticks under stem of the apples and place into oven for 5-8 minutes.

7. Take out of oven and let the cool on a rack for 5 minutes.

8.In a small or medium sauce pan at medium low heat add the caramel bits and water .Stir with a spatula or whisk until creamy and smooth.

9.With a small knife or spatula spread caramel on the cookies and add your toppings ie:(fall colored  sprinkles,reese’s pieces,chopped pecan,coconut the skies are the limit .Be simple or be very creative I am giving you the basics.Just Have Fun.

10. Just plate these cookie pops or stand them up in a cup or styrofoam and serve them at your Halloween party.

Simply Apple Pie Spice

Here is a quick and easy apple spice recipe .I can wait to start baking my pies apple ,pumpkin and sweet potato pies to name a few.This apple pie spice is very aromatic the pie you add it to will love you and you will love it back.It’s the Falliest spice you’ll ever know and taste.I should know and you will too.

 

Ingredients:

2 tbsps  ground cinnamon

2 tsps    ground cloves

1 tsp ground nutmeg

1 tsp ground ginger

1/2 tsp ground  cardamom

1/2 tsp ground  allspice

Directions:

1. Place all of the ingredients in a ziplock bag and close the seal. Shake until all of the ingredients  are combined.  store in a cool dry place for 3-6 months

Easy Rustic Sweet Bean Pie

The History and my experience with bean pie

This dessert is known to be apart of the African American and Muslim culture in my research its also found in the southern states.It’s an dessert with a deep culture .This is all I know about this type of pie.This history is not huge over the internet but I know different cultures have own bean desserts.

Bean pie, Bean Pie Oh what a memory .I remember as a kid eating bean pie to be truthful wasn’t my favorite but I loved sweet  baked  goodies like cakes,cookies, pies and etc.Now that I am older I have teetered tottered with the idea for a while so now I finally made it happen.This my first homemade bean pie and I tell you it is really good .It really doesn’t taste like it has beans in it and its has a nice sweetness with spices that comes through beautifully.I like it I hope you’d like it.

 

Mis En Place:

 

1 15oz can of Navy beans-Drained and Rinsed

3/4 cup light brown sugar

2 eggs – room temp

1 tsp vanilla extract

1/2 cup of milk, half/half or evaporated milk

1/2 tsp cinnamon

1/2 tsp ground ginger

1/4 tsp allspice

1/8 tsp nutmeg

1 unbaked pie shell

 

 

Directions:

1.Set the oven to 350 degrees

2.Puree the beans  in a blender,food processor or with an immersion blender.Now add in the sugar,eggs ,vanilla ,spices milk and with a hand mixer on low speed mix together until fully incorporated.

3.Now pour mixture into pie shell.

4.Place into the oven for 45 mins or until a tooth pick comes clean.

5.When done put pie onto a wire rack to cool for about 30 mins-1 hr.

6 Now you can plate and serve with some whipped cream.

 

Gluten Free Irish Soda Bread

What I made is gluten free Irish soda bread. It was so easy.  I made it  because I would like to learn more about gluten free cooking. It’s not always easy but I love the challenge. Irish soda bread was the thing to do. , Those who have a gluten allergy can certainly. make this .You can eat at any meal or as a snack or with some cheese and deli meat.This bread is so good.I have the recipe; it is posted down below.

 

Ingredients

2 cups gluten free flour blend

1/2 cup white sugar

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon xanthum gum

1/2 tsp sugar – for the top of the bread

1/2 cup raisins

1/2 cup golden raisins

1/2 tsp caraway seeds

1 egg

1 cup buttermilk

Directions

Preheat oven to 350 degrees.  Grease a round pan or cast iron skillet.

Combine the gluten free flour blend, raisins, caraway seeds, sugar, baking soda, xantham gum and salt in a large bowl.  In a separate bowl, whisk together egg and buttermilk. Make a well in the center of the dry ingredients and pour in the wet. Stir just until the dry ingredients are moistened. Pour into the cake pan or cast iron skillet.

Bake for 50 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean.  Cool on a wire rack, for 10 minutes, before removing from the pan.  Wrap bread in plastic wrap or aluminum foil for freshness.

Italian Anise Ricotta Cookies w/ Lemon Glaze and Non Pareils

Italian Ricotta Cookies sweet and pillowy  these are my new favorite dessert.I have been making these cookies for sometime now and like to say they are awesome.The ricotta makes them sorta moist and light.The first time I made these I was wowed they tasted so so good.They are easy and quick to make you can make these in no time all.Let me tell you can’t just have one trust and believe me.They are great with a nice mug of tea or tall glass of milk either way you can’t go wrong.They are good as a midday snack or a dessert after a meal.Before I forget let me say something about the lemon glaze ,this glaze catapults this cookie into another dimension okay its only my opinion but I am trying to say these are good  alrighty then .These cookies you make with your kids I am sure they will a have fun.

 

Ingredients:

1 stick of unsalted butter- room temperature

1/2 cup whole milk ricotta cheese

1/2 cup of sugar

1 large egg -room temperature

1 tsp vanilla extract

1-1/2 cups all purpose flour

1/2 tsp  baking soda

1/2 tsp salt

1/8 tsp star anise

 

Lemon Glaze:

2/3 cup powdered sugar

2 tbsps lemon juice

 

Directions: The Cookies and Lemon Glaze:

1 .Preheat the oven to 350

2. In a large bowl cream the butter and ricotta until combined.Now add in the sugar and vanilla  and mix.

3. Add in the dry ingredients  and mix.( add the dry ingredients a little at a time).

4.Now with a teaspoon or small ice cream scoop  drop the dough onto a parchment lined sheet pan.

5.Bake for 15 minutes or until light brown.When cookies are done transfer them to a cooling rack 10-15 minutes.

6. For the lemon glaze : In a small bowl mix the powdered sugar and lemon juice together until thoroughly mix.Now take a spoon and cover the cookie with the glaze,then add some non-pareils.

Now Enjoy your day with a great cookie I promise you’ll never just have one.

Independence Day Flower Cupcakes

I love summer it’s the best season for beautiful food.I love summer desserts.Cakes and cupcakes are my favorite and pies too.Now were right here on the of 4th July.Everybody’s getting ready for family get togethers and have that summertime food.Barbecues and swimmimg pools.People get excited because of fireworks and the American standards that will happen later on the day.But let me get back to cupcakes.

I’m going to show you how to cupcakes for the 4th of July.So you can have the at your parties or bbq’s.These cupcakes are quick and simple and fun to make .Your kids will enjoy decorating them for the big day.Now let me show you what you’ll need so you can make these delicous cupcakes.

Directions:

  1. For the cake mix follow the in instructions on the back of box for the cupcakes.
  2. When cupcake are out of the oven let the cool on a baking rack
  3. Once the cupcakes are cool frost with vanilla frosting and place the blueberries and slices strawberries on top of the cupcake make a flower pattern.
  4. I think its cool and fun to make.
  5. Place cupcakes on a serving dish and enjoy.
