Spooky Halloween Chocolate Bark

Happy Halloween to all of you ghouls out there.I have a treat that will sweeten  yo’ heart.Its something you can’t resist.Are you ready alrighty then it’s Chocolate Halloween Bark.It has all kinds of stuff in like cookies and candies  .This is easy, kid fun and friendly.I hope you have a sweet tooth I know I do. Halloween is just a stones throw and I am right and ready  in the spirit of it.This treat is just the start of my Halloweeny snack delights and will be having some  have fun cooking up scary dishes .

Ingredients:

1 bag of white chocolate chips(melted)

1/4 cup milk chocolate chips(melted)

2 tsp vegetable oil

1/3 cup reeses pieces

4 mini butterfinger bars( cut in half

1/3 cup M&Ms

1/3 cup candy corn

5  mini  Reeses”s peanut butter cups( cut in half)

10 mini Oreo cookies(cut in half)

 

Directions:

1. Line a pan with parchment paper or foil.

2.Put chocolate and oil in a  heat proof bowl and place over a  pot  of  simmering  water. Please don’t let water touch the bowl or the chocolate will seize up. 

3.Stir chocolate with a spoon or spatula until chocolate has  melted .

4.When chocolate has melted pour onto the sheet pan .

5. With a spatula spread chocolate to the thickness you like.

6. Now melt the milk chocolate chips and once melted drizzle over white chocolate .

7. Sprinkle the  cookies and candies all over the chocolate . 

8. Transfer pan to refrigerator and chill for 1 hour or overnight.

9.Now break into pieces and eat the bark right away or place into Halloween gift bags .

Smokey Cajun Pumpkin Seeds

I love what comes with fall the greatest thing about  it, is the food from Halloween to Thanksgiving.The pumpkins,apples , pies, cakes and  the fall spices its like heaven.My favorite out all of the fall staples is the pumpkin every fall I head down to the supermarkets and buy my pumpkins so I  make homemade puree’ , pumpkin seeds and desserts- yum .Speaking of pumpkin seeds I have a recipe for em’.They are Smokey Cajun Pumpkin Seeds and they are very crunchy and tasty.These are great for a snack at your Halloween party.This is fun to make with kids .

Ingredients:

1 cup cleaned and dried pumpkin seeds

1-1/2 tsp olive oil

1/2 tsp Cajun spice

1/4 tsp smoked paprika

1/4 tsp salt

 

Directions:

1.Preheat oven to 350 degrees and line a pan with parchment paper.

2.In a medium bowl add seeds,spices,salt and oil.Stir with a spoon until seeds are thoroughly coated.

3.Pour onto a sheet pan and spread in a single layer.

4.Place into oven and bake for 7-10 minutes or until seeds are are golden brown.

5. When done take out of oven and let cool for 20 minutes.

6.Transfer to serving dish or place into snack bags .

Caramel Apple Cookie Pops

Apples,Apples and More Apples can never get enough of apples.This fall I am really inspired and I will be trying new recipes like in the picture above .Those are my Caramel Apple Cookie Pops wow these are different in my eyes . I wanted to do caramel apples with real apples I just wasn’t into it so I went another way I am glad I did.These were easy and fun to make you and your kids.They would love  this because its kid friendly with parent supervision for the caramel .This is my homage to Halloween day . The best part is decorating the cookies with the caramel and putting candies,coconut or anything you want on them. These taste really delicious and not that sweet .You won’t be able to leave them alone after having one.So you if you have an apple imagination you can make just about anything apple.This beats bobbing for apples and besides that this is more fun.

Ingredients:

1 stick of butter

1/2 cup light brown sugar

1/4 cane or white sugar

1/2 tsp vanilla

1 egg

1/2 tsp red gel paste food coloring

1-3/4 cup flour

1/8 tsp salt

1/2 tsp apple pie spice

1/4 tsp baking soda

1/2 cup caramel bits or 12 caramel squares

Wooden popsicle sticks

1 -2 tbsps of water

Optional Toppings:

Reese’s Pieces

Autumn color sprinkles

Coconut flakes

Chopped Pecans

1.Preheat oven at 350 degrees and line a sheet pan with parchment paper.

2.In a bowl cream butter ,sugars and apple pie spice until light and fluffy.Add Vanilla and mix.

3.Now add  the egg and mix.Add the flour,baking soda ,salt ,food coloring and beat thoroughly until the dough is red.

4.Put the dough on a board or the counter and place the dough between 2 sheets of wax paper.Roll out dough to a 1/4 to 1/2 inch thickeness.

5. With apple shaped cookie cutter press it into dough and place it onto the sheet pan .

6.Place the popsicle sticks under stem of the apples and place into oven for 5-8 minutes.

7. Take out of oven and let the cool on a rack for 5 minutes.

8.In a small or medium sauce pan at medium low heat add the caramel bits and water .Stir with a spatula or whisk until creamy and smooth.

9.With a small knife or spatula spread caramel on the cookies and add your toppings ie:(fall colored  sprinkles,reese’s pieces,chopped pecan,coconut the skies are the limit .Be simple or be very creative I am giving you the basics.Just Have Fun.

10. Just plate these cookie pops or stand them up in a cup or styrofoam and serve them at your Halloween party.

Easy Rustic Sweet Bean Pie

The History and my experience with bean pie

This dessert is known to be apart of the African American and Muslim culture in my research its also found in the southern states.It’s an dessert with a deep culture .This is all I know about this type of pie.This history is not huge over the internet but I know different cultures have own bean desserts.

Bean pie, Bean Pie Oh what a memory .I remember as a kid eating bean pie to be truthful wasn’t my favorite but I loved sweet  baked  goodies like cakes,cookies, pies and etc.Now that I am older I have teetered tottered with the idea for a while so now I finally made it happen.This my first homemade bean pie and I tell you it is really good .It really doesn’t taste like it has beans in it and its has a nice sweetness with spices that comes through beautifully.I like it I hope you’d like it.

 

Mis En Place:

 

1 15oz can of Navy beans-Drained and Rinsed

3/4 cup light brown sugar

2 eggs – room temp

1 tsp vanilla extract

1/2 cup of milk, half/half or evaporated milk

1/2 tsp cinnamon

1/2 tsp ground ginger

1/4 tsp allspice

1/8 tsp nutmeg

1 unbaked pie shell

 

 

Directions:

1.Set the oven to 350 degrees

2.Puree the beans  in a blender,food processor or with an immersion blender.Now add in the sugar,eggs ,vanilla ,spices milk and with a hand mixer on low speed mix together until fully incorporated.

3.Now pour mixture into pie shell.

4.Place into the oven for 45 mins or until a tooth pick comes clean.

5.When done put pie onto a wire rack to cool for about 30 mins-1 hr.

6 Now you can plate and serve with some whipped cream.

 

Homemade Tuscan Seasoning

Here is a simple and easy Tuscan seasoning recipe .You can put this rub on chicken,fish,beef or vegetables.It’s very aromatic and tasty.

Ingredients:

1 Tbsp Italian seasoning

1/2 tsp fennel seeds

1/2 tsp hungarian Paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp kosher salt

1/4 tsp black pepper

1/4 tsp red pepper flakes

 

Directions:

1. Put all in ingredients in a small ziplock bag and shake until mixed.

2.Put season mix in a small container and jar.

3.Keep in dry and cool place for up to 6 months.

4.Enjoy!!!
