Sweet Potato White Bean Kale Soup

This is a great soup I had it the first time a few months ago and I smitten .It tasted so good that’s why I decided to make it.It is a good dish for the fall and winter seasons ,Keep you warm when the weather is cold.By the way did I say it has a spicy zing .This soup is good for vegetarians,vegans and people who have gluten allergies .So its very healthy that’s why I love it so much.It’s easy to make and it is accompanied with Parmesean Garlic Bread Croutons that recipe will be another page .I hope you enjoy this recipe.

Ingredients:

2 cups chopped kale ( lacinato and curly) 1 cup of each

1/2 cup of sweet potatoes – chopped

1 medium carrot- chopped

1 can cannellini beans (15 oz)

1/2 of  a small onion -chopped

1 large garlic clove -minced

1 medium tomato -chopped

1-1/2 cups chicken or vegetable broth

1 cup of water

1-1/2 tbsps  olive oil

1 tbsp butter

2 tsps Italian seasoning

1-1/2 tbsps fresh or dried parsley

1 sage leaf

1 sprig of rosemary

1/4 tsp sweet smoked paprika

1/4 tsp cayenne pepper

1-1/2 tsps kosher salt

1 tsp black pepper

Directions:

1.Heat oil in a medium pot over medium heat.

2. Add the garlic ,onions and saute , stir  for 3-4 mins or until translucent.

3. Now add in the kale ,tomatoes,carrots and beans.

4. Pour chicken broth and water  over the soup mixture.Now bring to a boil. Add in the spices and herbs .Stir thoroughly.

5. Boil on low for 15-20 minutes.Now add the sweet potatoes and cook for 10 minutes more.Last but not least add the cayenne pepper ,smoked paprika,salt,pepper and stir.

Chipotle Cranberry Glazed Chicken

Thanksgiving is next week and I  wanted to come up with interesting things to cook.This lady at the bus stop gave an idea “She said why don’t I use cranberry sauce to glaze chicken and I thought how  would I work the flavor combinations with that type of sauce.So I played around  with the ingredients and browsed around the internet a little light bulb went off .I have found what I have been looking for.So today I made the chicken and it was awesomely delicious.

The cranberry sauce glaze is easy to make because all you need is a can of jellied cranberry sauce and some orange juice ,orange zest sugar, and some spices.It’s not that sweet and if you reduce all of the ingredients to a thick sauce it almost resembles Ketchup.I think you will like this because I did and I was surprised what you can with a can of cranberry sauce.I have to thank that lady for suggesting this idea.

Ingredients:

1 lb of chicken thighs,breast,wings or any pieces of your choice

1-1/3 cup canned jellied cranberry sauce

1/2 cup orange juice

2-1/2 tbsps light brown sugar

1 tbsp butter

1/2 tsp red wine vinegar

2 tsps orange zest

1/2 tsp Baharat or Pumpkin seasoning

1/2 tsp chipotle powder or smoked paprika with cayenne powder

Salt and Pepper

1. Set oven to 400 degrees.

2.Place chicken  on a foil lined sheet pan .

3.Rub olive oil all over chicken.

4.Sprinkle salt and pepper evenly all over chicken.

5. Place chicken into oven and bake for 45-50 minutes or until golden brown.

For The Glaze:

1. In a medium sauce pan add  the cranberry sauce ,orange juice ,sugar butter,vinegar and spices.Whisk until smooth over medium heat.

2.Cook cranberry mixture until thick like ketchup (About 8-10 minutes).Whisk continually to prevent burning.

3.When the chicken is done.Take a pastry brush or spoon evenly spread the glaze all over the chicken and place it back into the oven for 5 minutes.Repeat the procedure and bake for 5 more minutes.

4.Take chicken out oven and transfer to a serving dish and Enjoy!!!

Simplylicious Baked Buffalo Wings!!!

I have made one of  favorite appetizers they are Buffalo Chicken Wings.I remember the first time I had Buffalo wings I think I was 15 yrs old it was at restaurant near my Dad’s house .The Chicken wings were so good. I had to  order them every time I went to there to eat.I also have another memory for the wings it was 1996 a friend of mine showed how to make these and from there I was hooked.These Buffalo wings are baked not like ones I made years ago which  were deep fried .I made these a little healthier but with the same way that we made them.These are simple and quick to make.These are  good with fries and a salad too.I hope you enjoy them.

Ingredients:

1 lb chicken wings

1/2 cup hot sauce

1 tbsp butter-melted

1 tsp lemon juice

2 pinches of dried parsley

1.Preheat oven to 425 degrees.

2.Put the chicken on a foil lined sheet pan.

3. Place the chicken in heated oven and bake f0r 45-50 minutes.

4.In  a small or medium sauce put the hot sauce,butter,lemon juice and parsley.Now stir.

5.Take chicken wings out of oven and place them in a bowl.

6. Now pour the buffalo sauce over chicken and stir with a spoon until fully covered.

7. Transfer wings to a serving dish and accompany the wings with blue cheese dip or any dip you have.

Easy Rustic Sweet Bean Pie

The History and my experience with bean pie

This dessert is known to be apart of the African American and Muslim culture in my research its also found in the southern states.It’s an dessert with a deep culture .This is all I know about this type of pie.This history is not huge over the internet but I know different cultures have own bean desserts.

Bean pie, Bean Pie Oh what a memory .I remember as a kid eating bean pie to be truthful wasn’t my favorite but I loved sweet  baked  goodies like cakes,cookies, pies and etc.Now that I am older I have teetered tottered with the idea for a while so now I finally made it happen.This my first homemade bean pie and I tell you it is really good .It really doesn’t taste like it has beans in it and its has a nice sweetness with spices that comes through beautifully.I like it I hope you’d like it.

 

Mis En Place:

 

1 15oz can of Navy beans-Drained and Rinsed

3/4 cup light brown sugar

2 eggs – room temp

1 tsp vanilla extract

1/2 cup of milk, half/half or evaporated milk

1/2 tsp cinnamon

1/2 tsp ground ginger

1/4 tsp allspice

1/8 tsp nutmeg

1 unbaked pie shell

 

 

Directions:

1.Set the oven to 350 degrees

2.Puree the beans  in a blender,food processor or with an immersion blender.Now add in the sugar,eggs ,vanilla ,spices milk and with a hand mixer on low speed mix together until fully incorporated.

3.Now pour mixture into pie shell.

4.Place into the oven for 45 mins or until a tooth pick comes clean.

5.When done put pie onto a wire rack to cool for about 30 mins-1 hr.

6 Now you can plate and serve with some whipped cream.

 

Gluten Free Irish Soda Bread

What I made is gluten free Irish soda bread. It was so easy.  I made it  because I would like to learn more about gluten free cooking. It’s not always easy but I love the challenge. Irish soda bread was the thing to do. , Those who have a gluten allergy can certainly. make this .You can eat at any meal or as a snack or with some cheese and deli meat.This bread is so good.I have the recipe; it is posted down below.

 

Ingredients

2 cups gluten free flour blend

1/2 cup white sugar

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon xanthum gum

1/2 tsp sugar – for the top of the bread

1/2 cup raisins

1/2 cup golden raisins

1/2 tsp caraway seeds

1 egg

1 cup buttermilk

Directions

Preheat oven to 350 degrees.  Grease a round pan or cast iron skillet.

Combine the gluten free flour blend, raisins, caraway seeds, sugar, baking soda, xantham gum and salt in a large bowl.  In a separate bowl, whisk together egg and buttermilk. Make a well in the center of the dry ingredients and pour in the wet. Stir just until the dry ingredients are moistened. Pour into the cake pan or cast iron skillet.

Bake for 50 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean.  Cool on a wire rack, for 10 minutes, before removing from the pan.  Wrap bread in plastic wrap or aluminum foil for freshness.

Roasted Potatoes and Green Bean Salad

Here is another dish with green beans in it .I love how green versatile green beans are it sure make my creative mind blossom.This my green bean and roasted potato salad .This salad isn’t your typical mayo based salad. It’s dressing in a sweet mustard dressing to give it that bit of tang with the sweet .I like to tell you it compliments the pallet very well and its not that strong of a flavor. It’s vegetarian and vegan friendly so you don’t have to worry. This salad can be served ribs,chicken or fish.You can make it for Barbecues,Picnics or for any occasions.It a great side dish that you will enjoy.

Ingredients:

1/2 lb green beans- clean and steams trimmed

1/2 cup red potatoes- rinsed and cut in half

2 tbsps sliced red onions

1 large clove garlic -minced

Ingredients for sweet mustard dressing:

1-1/2 tbsps yellow mustard

1 tsp apple cider vinegar

1/3 cup canola or vegetable oil

1 tsp Italian seasoning

2 tsps granulated sugar

Directions:

1.In a medium or large bowl place green beans,roasted potatoes,onions and garlic.Now set aside.

2.In a small bowl put olive oil, vinegar,mustard,Italian seasoning and sugar.With a small whisk or fork mix thoroughly.

3.Pour sweet mustard mixture over potatoes and green beans.Stir with a fork until covered.

4.Now transfer to a serving dish and place into the refrigerator until ready to serve.

5.Eat and Enjoy!!!

Homemade Shake N’ Bake Mix

Here is a simple recipe for homemade Shake N’ Bake breadcrumb mix:

Ingredients:

2-3/4  cups breadcrumbs

1 packet Goya Sazon with coriander and annotto

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1 tsp dried parsley

1 tsp Italian seasoning

1 tsp salt

1/2 tsp black pepper

 

 

Directions:

1. Place all ingredients into a medium to large ziploc bag.

2. Zip close the bag at top.

3.Shake the bread crumb mixture until combined.

Now you can use this on your Chicken,Poultry,Seafood Or Vegetables.

Shake N Bake Style Chicken Drumsticks

Shake N Bake- Wow those few words just brings me back to my childhood.My mother would make shake n bake chicken and I was always excited.I love retro foods from my childhood like in the 70’s I guess I told my age.Well lets get to 2013.Whenever I go to the supermarket I always see the shake n bake mix and I always look at the back of the box at the ingredients.I have always wanted to make my own mix and now I finally did.Today I made drumsticks and coated them with my version of shake n’ bake bread crumb mix.Man they were oh so tasty . This recipe is easy to make and your kids would have fun too.I can’t  wait til you try this recipe please let me know when you do.

Ingredients:

1 lb chicken drumsticks or any selection

Water

Shake N Bake mix

Ziploc Bag

Directions:

1.Preheat oven to 400 degrees.

2.Pour shake n bake mixture into the ziploc bag.

3. Take the drumsticks and dip them into the water.

4.Place the drumsticks into the bread crumb mixture.

5. Shake bag until chicken is thoroughly coated.

6.Place the chicken onto a foiled or parchment lined pan.

7.Bake for 50-60 minutes.

8.Transfer to a serving dish and you can have this as an easy Christmas main dish.Serve with salad,rice or potatoes.

Cheddar Ciabatta Roll Garlic Bread

When it comes to garlic bread I wish I can step back into time.I remember my mother’s neighbor she made the best garlic bread oh boy it was good.The best part was the cheese I love the way it tasted.I would eat this with a bowl of Spaghetti-O’s every child’s dream to never to wake up from.I wanted to make a version of that garlic bread from the past and put a little twist to it.Her garlic bread was made with french bread and yellow american cheese. I used Ciabatta Rolls , Cheddar Cheese and added a little red pepper flakes for a hint of surprise.I’d like to thank her for the inspiration and those we’re the good ole’ times.Just me and my Spaghetti-O’s.

Ingredients:

2 Ciabatta Roll- Slice in half

Cheddar Cheese

4 garlic cloves-roasted

2-1/2  tbsps salted butter

1 tbsp olive oil

1 tsp parsley

1/4 tsp red pepper flakes

 

Directions:

1.Set oven to 350 degrees

2.With a bread knife slice the Ciabatta rolls in half and toast for 2-4 minutes .Take out of oven and set aside

3. In a small sauce pan melt the butter and now add the oil.

4.Pour butter mixture  in into a bowl and  smashed the garlic until it looks paste.

5.Add in the parsley and red pepper flakes,Now stir until combined.

6.Spoon butter mixture onto bread cover evenly.

7.Top with the cheese and place back into oven  for 1-2 minutes or until cheese has melted.

Serve this with pasta,seafood or a salad.

Parmesan Garlic Bread Croutons

These croutons goes well with soup .The croutons can also be use as apart of appetizers like  Crostini or Bruschetta .Great for the holidays ,you can also use many shapes like stars,letters,moons, the sky is the limit.I hope you have making these croutons. I did…”LOL”

 

Ingredients:

3 pieces of whole or white bead

1 tbsp olive oil

1/2  tsp garlic powder

1/4 tsp dried or fresh parsley

1 tsp grated parmesan cheese

small oval cookie cutter

Directions:

1. Preheat oven at 325 degrees.

2. Put the bread on a plate and using the oval cookie cutter  press down to make the oval shapes.On a lined foiled sheet pan,put the bread  in the oven .Bake for 4-7 minutes on one side .Repeat for the other side. When done take out and let cool.

3. In  a small bowl mix together the olive oil,garlic powder,  salt,parsley flakes,parmesan cheese.

4.Spread mixture on the croutons and return back to the oven for 2-4 minutes

5. Croutons will yield 6 croutons.
