Stuffed Turkey Meatballs

Here is a delicious meatball appetizers to serve at your holiday parties .These meatballs are so flavorful and moist you’ll be coming back for seconds and thirds.They are made with ground turkey,stuffing mix and best of all dried cranberries.The cranberries add a tarty sweetness that stands out in the meatballs.These one bite appetizers are my favorite because just pick it up and enjoy it without all of the guilt because they are healthy.Great for vegetarians whole still eat chicken and turkey .You can use other types of ground meats such as pork,chicken or beef if you like and change up the spices and herbs to suit your tastes.I think your going to like these because they Nicole approved and I wouldn’t lie to you .So please give this recipe a try and let me know what you think!!!

Ingredients:

1 Lb Ground Turkey

1 tbsp olive oil

1 tbsp butter-for pan

1 tab

1 cup stuffing cubes-moistened with 2 tbsps of water

1/4 cup dried cranberries

1/2 small onion finely diced

2 garlic cloves finely minced

1 egg

1 tsp ground sage

1 tsp poultry seasoning

salt and pepper to taste

1. Preheat oven to 375 degrees

2.Turn stove onto medium high heat.Put butter into pan.

3.Put onions and garlic into pan  for 3-6 minutes until translucent.

4.Remove onions and garlic from pan .Set Aside.

5.In a medium or large bowl add all of ingredients and stir with a spatula until completely mixed.

6.With a small ice cream scoop or spoon and drop the meatballs on a foil lined sheet pan.

7.Place meatball into oven and bake for 15-20 minutes.

8.Remove from oven and transfer meatballs to a serving dish.

9.Drizzle gravy over meatballs and serve and Enjoy!!!

 

 

 

 

Gluten Free Irish Soda Bread

What I made is gluten free Irish soda bread. It was so easy.  I made it  because I would like to learn more about gluten free cooking. It’s not always easy but I love the challenge. Irish soda bread was the thing to do. , Those who have a gluten allergy can certainly. make this .You can eat at any meal or as a snack or with some cheese and deli meat.This bread is so good.I have the recipe; it is posted down below.

 

Ingredients

2 cups gluten free flour blend

1/2 cup white sugar

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon xanthum gum

1/2 tsp sugar – for the top of the bread

1/2 cup raisins

1/2 cup golden raisins

1/2 tsp caraway seeds

1 egg

1 cup buttermilk

Directions

Preheat oven to 350 degrees.  Grease a round pan or cast iron skillet.

Combine the gluten free flour blend, raisins, caraway seeds, sugar, baking soda, xantham gum and salt in a large bowl.  In a separate bowl, whisk together egg and buttermilk. Make a well in the center of the dry ingredients and pour in the wet. Stir just until the dry ingredients are moistened. Pour into the cake pan or cast iron skillet.

Bake for 50 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean.  Cool on a wire rack, for 10 minutes, before removing from the pan.  Wrap bread in plastic wrap or aluminum foil for freshness.

Apple Jelly Glazed Jalapeno Meatballs

I made these meatballs  for a Christmas party as one of my appetizers and they were a hit .This time I made these a little different I roasted the Jalapeno pepper and added it to the beef.I added some other stuff like spices and herbs.I made sure these bad boys had some flavor .So the next time your throwing a party or a get together make sure you make these apart of your shindig and enjoy.

Ingredients:

1 lb ground beef

2/3 cup red pepper – chopped

1 jalapeno pepper roasted seeded and chopped

1-1/2 tbsps   onion -chopped

1 medium garlic clove -minced

1/2 cup bread crumbs

3 tbsps  milk

2 tsps Italian seasoning

1/2 tsp dried thyme

1/2 tsp dried parsley

1-1/2 tbsps olive oil ( I used light olive oil)

1/2 tsp salt

1/4 tsp black pepper

For The Glaze:

3 tbsps apple jelly

Sauteing the onions ,garlic and bell pepper:

1. Pour olive oil in a heat skilled .

2. Now add the red bell pepper,onions and garlic.

3.Saute for 3-5 minutes or until mixture  becomes tender.

 

Making  The  Meatballs:

 

1. In a  large bowl add the ground beef,moistened bread crumbs , chopped onion,red bell pepper, jalapeno and minced garlic.Now add  the   Italian seasoning,thyme ,parsley and salt and pepper.

2.Using your hands or a Spatula mix the ground beef mixture thoroughly until everything is combined.

3.On a  parchment lined sheet pan shape the into 1″  meatballs  and make them an 1″ apart.

4. Place in into a 350 degree oven and bake for  25 minutes.

5. When the meatballs are done cooking, let them rest for 5-10 minute to reabsorb their juices lost during baking

Making the glaze:

1.Put the apple jelly into  small sauce pan.

2.Whisk the apple jelly until fully melted.

3.Once jelly has melted, pour the mixture over the meatballs and stir with a spatula to cover the meatballs.

4.Once the jelly glaze has been added ,now you finally finish by adding the tooth picks to meatballs.

Once you make these you’ll be hooked .

So  have fun making great appetizers and eat on dude.

Italian Anise Ricotta Cookies w/ Lemon Glaze and Non Pareils

Italian Ricotta Cookies sweet and pillowy  these are my new favorite dessert.I have been making these cookies for sometime now and like to say they are awesome.The ricotta makes them sorta moist and light.The first time I made these I was wowed they tasted so so good.They are easy and quick to make you can make these in no time all.Let me tell you can’t just have one trust and believe me.They are great with a nice mug of tea or tall glass of milk either way you can’t go wrong.They are good as a midday snack or a dessert after a meal.Before I forget let me say something about the lemon glaze ,this glaze catapults this cookie into another dimension okay its only my opinion but I am trying to say these are good  alrighty then .These cookies you make with your kids I am sure they will a have fun.

 

Ingredients:

1 stick of unsalted butter- room temperature

1/2 cup whole milk ricotta cheese

1/2 cup of sugar

1 large egg -room temperature

1 tsp vanilla extract

1-1/2 cups all purpose flour

1/2 tsp  baking soda

1/2 tsp salt

1/8 tsp star anise

 

Lemon Glaze:

2/3 cup powdered sugar

2 tbsps lemon juice

 

Directions: The Cookies and Lemon Glaze:

1 .Preheat the oven to 350

2. In a large bowl cream the butter and ricotta until combined.Now add in the sugar and vanilla  and mix.

3. Add in the dry ingredients  and mix.( add the dry ingredients a little at a time).

4.Now with a teaspoon or small ice cream scoop  drop the dough onto a parchment lined sheet pan.

5.Bake for 15 minutes or until light brown.When cookies are done transfer them to a cooling rack 10-15 minutes.

6. For the lemon glaze : In a small bowl mix the powdered sugar and lemon juice together until thoroughly mix.Now take a spoon and cover the cookie with the glaze,then add some non-pareils.

Now Enjoy your day with a great cookie I promise you’ll never just have one.

I love summer it’s the best season for beautiful food.I love summer desserts.Cakes and cupcakes are my favorite and pies too.Now were right here on the of 4th July.Everybody’s getting ready for family get togethers and have that summertime food.Barbecues and swimmimg pools.People get excited because of fireworks and the American standards that will happen later on the day.But let me get back to cupcakes.

I’m going to show you how to cupcakes for the 4th of July.So you can have the at your parties or bbq’s.These cupcakes are quick and simple and fun to make .Your kids will enjoy decorating them for the big day.Now let me show you what you’ll need so you can make these delicous cupcakes.

Directions:

  1. For the cake mix follow the in instructions on the back of box for the cupcakes.
  2. When cupcake are out of the oven let the cool on a baking rack
  3. Once the cupcakes are cool frost with vanilla frosting and place the blueberries and slices strawberries on top of the cupcake make a flower pattern.
  4. I think its cool and fun to make.
  5. Place cupcakes on a serving dish and enjoy.
