Parmesan Garlic Bread Croutons

Ingredients:

3 pieces of whole or white bead

1 tbsp olive oil

1/2  tsp garlic powder

1/4 tsp dried or fresh parsley

1 tsp grated parmesan cheese

Directions:

1. Preheat oven at 325 degrees.

2. Put the bread on a plate and using the oval cookie cutter  press down to make the oval shapes.On a lined foiled sheet pan,put the bread  in the oven .Bake for 4-7 minutes on one side .Repeat for the other side. When done take out and let cool.

3. In  a small bowl mix together the olive oil,garlic powder,  salt,parsley flakes,parmesan cheese.

4.Spread mixture on the croutons and return back to the oven for 2-4 minutes

5. Croutons will yield 6 croutons.

Maple Spiced Pecan Pie Bites

I am excited to share some of my dishes and desserts.I am starting with these pecan bites that I had made once before for one my Christmas parties they were a hit.They are easy to make and made with maple syrup instead of corn syrup I am not a fan .I added a cinnamon and ground ginger to add a little extra flavor.I made them with a store bought crust to make things easier if you prefer to make your own  crust that is fine too.

Ingredients:

2 eggs at room temp

1/2 cup maple syrup

1/4 light brown sugar

2 tsps vanilla paste or vanilla extra

2 tbsps melted  unsalted butter

Pinch of salt

1/2 tsp cinnamon

1/2 ground ginger

1 store bought or homemade pie crust

 

Directions:

1.Preheat oven to 350 degrees.

2.In a medium or large  mixing bowl place all of  the ingredients. Mix with a whisk or spatula until thoroughly combined.Place aside.

3.Roll out the dough on a lightly floured surface. Take a 3 inch round cookie cutter and cut out as many circles as you can.

4.Place the cut out dough into a mini muffin pan and gently press into pan.

5.Spoon 2 tsps of the pecan filling in each pie shell.(try not to over fill)

6.Place into oven and bake  for 15- 25 mins or until filling is set and  crust is golden brown.

7.Let cool pecan bites cool on a bakers rack and let cool for 5 minutes in the pan.Now remove from pan with a butter knife carefully .Cool completely .

Now transfer the pecan bites to a  serving dish and Enjoy!!!

Simply Lemon Basil Pesto

It’s been along time since I had pesto.I love making pesto from scratch instead from a container it has a fresh taste and its healthier.This is a versatile Italian sauce you can eat with fish, chicken,pasta and so much more.It is very garlicky and lemony yummy.It’s made with toasted pine nuts,basil,parmesan cheese,garlic,lemon zest and lemon juice.I tasted it my my it was good and I think you’d like it cause its the best I have ever made. I hope you enjoy it.

Ingredients:

2 cups fresh basil

1/4 cup toasted pine nuts

3 garlic cloves

1/2  cup olive oil

1-1/2 tbsps lemon juice

2 tsps lemon zest

1/4 tsp salt

1/4 cup  grated parmesan cheese

Directions:

1. In a food processor or blend place all of the ingredients inside and pulse until smooth.

2. Transfer to a bowl or jar and refrigerate until ready to serve.

3.Enjoy!!!

Spinach Watermelon Blueberry Salad

I love salads especially during the summer when days are hot.Here is a healthy salad that is good for vegans and vegetarians.I first served this salad at a party I threw.It was a hit I have always wanted to post this cause it’s a good tasting salad for everyone.The Watermelon and Blueberries make this salad go up another notch really tasty.I am sharing this recipe because its a season of Watermelon and Blueberries too.This dish is great for picnics,barbecues and for the summertime holidays.Kids would even like it so they can help make it .Its quick and  easy to make takes less than 30 minutes.Please try this salad and let me know what you think.I hope you enjoy it.

Ingredients:

2 cups baby spinach

1/2 cup cubed watermelon

1/4 cup blueberries

2 tbsps sliced red onions

Handful of pecans chopped

2 tbsps crumbled feta cheese

 

Directions:

1. In a large bowl place the spinach and watermelon.

2.Now add in the rest of the ingredients.

3.Pour the dressing over the salad and serve.(I didn’t put the dressing on it will be in another post.
